Mediterranean Spaghetti

This quick and easy recipe for spaghetti with a can of DIAVENA mackerel in tomato sauce is rich in heart-healthy omega-3s, protein, and essential micronutrients! Nutritious, delicious, and ready in just 30 minutes.

Ingredients:

  • 1 can of DIAVENA mackerel in tomato sauce (180 g)
  • 150 g spaghetti or other pasta (enough for 2 servings)
  • 2 garlic cloves
  • 2 sprigs of cherry tomatoes (preferably fully ripe)
  • 10 large pitted green olives
  • 1 tsp fresh or dried parsley
  • Salt + black pepper (to taste)

Optional additions: freshly grated Parmesan, chili flakes.

Preparation:

  • Bring a large pot of salted water to a boil (for cooking the spaghetti).
  • Peel and finely chop or press the garlic.
  • Wash the cherry tomatoes carefully, keeping them on the vine.
  • Finely chop the parsley (if using fresh).
  • Slice the olives.
  • Set everything aside.

Cooking Instructions:

  1. Once the water is boiling, add the spaghetti and cook until al dente according to the package instructions.
  2. When ready, remove from heat and drain. Return the spaghetti to the pot and mix with a drop of olive oil to prevent sticking.
  3. Heat a pan over medium-high heat. Add a little olive oil, then the garlic and the cherry tomato sprigs.
  4. Cover the pan and cook until the tomatoes soften.
  5. In another large pan, add the mackerel in tomato sauce from the can. Warm for a few minutes.
    • If you want to serve the dish with whole pieces of mackerel, be careful not to break them; once warmed, remove them from the pan.
  6. Add the drained spaghetti to the tomato mackerel sauce.
  7. Season with salt and black pepper to taste. Stir and cook for another minute.
  8. Remove from heat and sprinkle with a little parsley.
  9. Serve the spaghetti and arrange the mackerel, cherry tomatoes, and olives on top.
  10. Optional: sprinkle with Parmesan or chili flakes.

Enjoy while the dish is hot! 🍝✨
