This simple recipe for Mackerel in Tomato Sauce with Rice will bring you back to memories of the sea, sunshine, and special moments shared with family.
Ingrediants
- 2 cans of Diavena mackerel in tomato sauce (160 g each)
- 150 g rice
- 2 tbsp vegetable oil
- 1 small onion
- 2 tbsp tomato purée
- 28 g Knorr vegetable stock (or homemade vegetable stock if you prefer)
- A few olives
- A handful of capers
Preparation:
- In a pot with 500 ml of water, add the vegetable stock and bring to a boil.
- Heat the oil in a pan over medium heat. Add the finely chopped onion and cook until translucent.
- Stir in the rice and cook until it becomes slightly transparent, stirring occasionally.
- Add the hot stock and simmer until the rice is fully cooked.
- In a separate pan, pour in the contents of the mackerel cans and gently warm through.
- Serve the mackerel in tomato sauce alongside the rice, garnished with chopped olives and capers.

Note: There’s no need to add extra salt to the recipe since the stock is already salty, but feel free to adjust to taste if necessary.
