This simple recipe for Mackerel in Tomato Sauce with Rice will bring you back to memories of the sea, sunshine, and special moments shared with family.

Ingrediants

  • 2 cans of Diavena mackerel in tomato sauce (160 g each)
  • 150 g rice
  • 2 tbsp vegetable oil
  • 1 small onion
  • 2 tbsp tomato purée
  • 28 g Knorr vegetable stock (or homemade vegetable stock if you prefer)
  • A few olives
  • A handful of capers

Preparation:

  1. In a pot with 500 ml of water, add the vegetable stock and bring to a boil.
  2. Heat the oil in a pan over medium heat. Add the finely chopped onion and cook until translucent.
  3. Stir in the rice and cook until it becomes slightly transparent, stirring occasionally.
  4. Add the hot stock and simmer until the rice is fully cooked.
  5. In a separate pan, pour in the contents of the mackerel cans and gently warm through.
  6. Serve the mackerel in tomato sauce alongside the rice, garnished with chopped olives and capers.

Note: There’s no need to add extra salt to the recipe since the stock is already salty, but feel free to adjust to taste if necessary.
