This quick and easy spaghetti recipe with canned DIAVENA mackerel in tomato sauce is packed with heart-healthy omega-3s, protein, and micronutrients! Nutritious, tasty and ready in 30 minutes.
Ingrediants
- 1 can DIAVENA mackerel in tomato sauce (180 g)
- 150 grams of spaghetti or other pasta (enough for 2 servings)
- 2 cloves of garlic
- 2 sprigs of cherry tomatoes (preferably ripe)
- 10 large pitted green olives
- 1 tsp fresh or dried parsley
- Salt + pepper (to taste)
Additions of choice: freshly grated parmesan, chili flakes.
Method of preparation:
Bring a large pot of salted water to the boil (for cooking the spaghetti).
Preparation:
- Peel and finely chop or press the garlic.
- Wash the tomatoes, making sure they stay on the branch.
- Finely chop parsley (if using fresh).
- Chop the olives
- Set aside.
Method of preparation:
- Once the water is boiling, add the spaghetti and cook al dente according to package directions. Once the spaghetti is done, remove from heat and drain. Return them to the pot and toss with a drizzle of olive oil to prevent the pasta from sticking.
- Heat a skillet over medium-high heat. Add a little olive oil and add the garlic and cherry tomato sprigs. Cover the pan and cook until the tomatoes are soft.
- In another large pan, add the mackerel to the canned tomato sauce. Heat for a few minutes. (If you want to serve the dish with whole pieces of mackerel, be careful not to break them up and remove them from the pan once they are warm).
- Then add the drained spaghetti to the mackerel tomato sauce. Add salt + pepper to taste. Stir and cook for about 1 minute more. Remove the pan from the heat and sprinkle with some parsley.
- Serve the spaghetti and arrange the mackerel, cherry tomatoes and olives on top. Sprinkle with parmesan or chili flakes if desired.
